while i realize that it looks as though i’ve fallen off the face of the earth, i have not. i have been in hiding, trying out all kinds of grain free recipes. some, i can say, suffice better than their grain counterparts. others are truly unique in flavor. i would call these coconut flour brownies truly unique in flavor. this does mean that i did not like them. i actually really liked them. i could
taste hints of the coconut come through with cinnamon, which gave them a sort of south american flavor. -similar to mexican hot chocolate. they were not dense and fudgy, or overly sweet. they are a little cakey and dusty. i know it is hard for that description to sell them, but they really are great. if you want a “same ‘ol brownie” recipe, find it anywhere on line or in the front of a grocery store.
coconut flour brownies
8 oz ricotta cheese
1/4 cup soy or other milk
1 stick butter
1 tbsp vanilla extract or scraping from a bean
4 large eggs
1 cup coconut flour
1/2 cup honey or agave nectar
1/4 tsp sea salt
1 tbsp cinnamon
1/2 cup unsweetened cocoa powder
1/4 tsp baking powder
1/3 cup heavy cream
1/2 cup chopped pecans
preheat oven to 350. brush 8×8 square baking pan with butter or oil, and cut parchment paper to stick to the bottom of it. beat ricotta cheese with mixer until smooth. beat in butter, vanilla, and honey.
in separate bowl, mix together cinnamon, salt, cocoa, baking powder, and flour.
once ricotta mixture is smooth, drop in eggs one at a time. beat until incorporated. mix in dry ingredients, and then heavy cream. if the mixture looks to dry, you can add a splash of milk for good measure. once everything looks pretty mixed, throw the nuts in there and stir them in by hand. spread in baking pan, then sprinkle with cinnamon sugar if you like.
bake for 40 minutes, or a little longer until done. cool on a wire rack. for best results, stick ’em in the fridge for a few hours before cutting.
the original recipe can be seen here, at healthy indulgences. i prefer this version, with my modifications. i found them a little more moist and rich, for some reason. please give healthy indulgences a visit, though. while i do tend to sub in easier and more “whole” ingredients in the recipes, she has some great ones for the health conscious and the grain free!
